Cheese & Ham Cup Bun

Today I used Basic Sweet Bun Dough Method to make some Cheese & Ham Cup Bun. The advantages of using paper cup, you'll save the trouble of greasing the baking tray & also save space as the bun will be rising upward and not expanding side way. You'll need some muffin cups to support the shape, without the muffin cups the bun will still expand to the side.
Ingredients:
  • Prepare a portion of basic sweet bun dough
  • Sandwich Ham - 15 slices
  • Sandwich Cheddar Cheese - 4 slices, cut into 8 slices
  • 1 beaten egg yolk for glazing

Utensils: 30nos. of muffin cup & 30pcs of paper cup (place paper cups into muffin cups)

Method:

  1. Divide Basic Sweet Bun Dough into small doughs weighing 40gm each. Use a rolling pin to flatten the dough into a square sheet.
  2. Place a slice of ham on top of the square dough, roll up, cut it into 2pcs & twist as shown in the pictures below.
  3. Place the buns into the paper cups & put into the oven to proof for 45 minutes without plug-in the current.
  4. Gently brush some beaten egg yolk on the surface of each bun & place a slice of cheese on top. Bake in the pre-heated oven at 170c for 10 to 12 minutes.

Tips: Do not over bake during the baking process, as the bread will become hard & dry instead of soft & fluffy. For my oven, I prefer to set the temperature at 170c instead of 180c.

Use a rolling pin to flatten the dough into a square sheet & place a slice of Ham on top.
Roll up together
Use a knife to cut it into 2 portions
Use scissors to cut one of the portion into 3 pcs, but the dough is still attached to each other.
Twist it like a flower.
Place it into a paper cup which is supported by a muffin cup
Some can even cut into 4 portions
Let it rise in the paper cup
Place them into the oven & proof for another 45 minutes without plug-in the current
After 45 minutes of secondary proofing process, gently brush some beaten egg yolk on the surface & place a slice of cheese on top.
