Lemon & Tomato Salmon


I read in some SHAPE magazine about Lemon & Garlic Salmon which seemed very easy to prepare and very healthy too! So I copied down the recipe in my handphone and tried to replicate the dish. I did this with some modification. I also baked some herbed potato wedges which was also a sold-out for that evening! Of course, salad was also made to make the meal complete!



Recipe for Lemon & Tomato Fish (modified)
(Makes for 5 adults)

Ingredients:
600g Salmon fish fillet
2 tbsp Lemon juice
1 clove Garlic finely diced
1 Onion thinly sliced
4 Tomatoes, unseeded and diced
Salt and pepper to taste
1/2 tsp Brown sugar
2 tbsp Tomato ketchup
1 cup cornflakes
1/2 cup grated Cheddar cheese and Mozzarella Cheese

Method:
1. Remove skin from fish.
2. Marinate fish with lemon juice, salt and pepper at least 1 hour before.
3. Place in a swallow oven proof dish.
4. Top with garlic, onion and tomatoes.
5. Sprinkle with sugar.
6. Pour ketchup over the fish.
7. Spread cornflakes evenly over the fish, followed by cheese.
8. Bake in oven at 180C for 30mins or until fish flakes easily when tested with a fork.
9. Serve with green salad.



Recipe for Rosemary Chicken Frittata



(Makes approximately eight 3.5" x 3.5" tart dish)

Ingredients:
300g Chicken breast meat, diced

1 medium Carrot, diced
2 stalks of Celery, diced
10 French beans, diced
2 sprigs fresh Rosemary, chopped finely
Some soya sauce
Some olive oil
Dash of pepper
Some garlic

Fillings:
11 Eggs
220g Whipping Cream
1 packet (250g) Mozzarella Cheese
1 packet Yellow tomatoes, halved
Dash of pepper
Dash of rock salt

Method:
1. Marinate chicken with rosemary, olive oil and soya sauce.
2. Heat a saucepan. Add some olive oil, then add garlic and stir fried till fragrant.
3. Then add in all the vegetables, and cook till soft.
4. Add in the chicken and stir fried until about 3/4 cook. Off the heat.
5. Prepare the tart dish.
6. Scoop the cooked ingredients into the dish evenly.
7. Sprinkle the cheese on top of the cooked food.
8. Arrange tomatoes evenly on each of the dish.
9. Fill up the dish with the eggs, whipping cream, pepper and salt mixture.
10. Bake in a preheat oven of 190C for 20mins, or until browned.
11. Serve while hot.

Feel free to change the ingredients anyway you like, or add any other ingredients. I supposed the essential ingredients are pepper, salt, eggs and whipping cream.

Well, if you want to know where I got all these pretty little baking dishes, they were from Daiso. I love to use them as they were just enough for a serving each.

Wholemeal Pizza Base Recipe



Ingredients
100g Bread flour
100g Wholemeal flour
10g Caster sugar
1/2 tsp Salt
1/2tsp Instant dry yeast
110g Water.
10g Olive oil

Method:
1. Mix all the ingredients together, except olive oil.
2. Knead until they become a crumbly consistency, then add in 10g olive oil.
3. Continue to knead until smooth springy soft dough.
4. Cover it with cling film and let it rest for 1 hour.
5. Divide the dough up into two equal portion let them rest for 15 minutes.
6. Roll out the doughs onto two round greased pans.
7. Then spread the pizza sauce onto the pizza dough then sprinkle with some freshly grated cheddar cheese and mozzarella cheese.
8. Add your toppings and sprinkle again with mozzarella cheese.
9. Bake the pizza at the lowest rack in the oven at 220C preheated oven for 10 minutes.
10. Then reduce the temperature to 190C and transfer to the centre rack and continue baking for another 10mins.

Pizza Paste Recipe
Ingredients:
7 medium Tomatoes, cut
A few cloves of garlic, cut
Fresh basil leaves
Some olive oil

Methods:
1. Heat the olive oil in a tall saucepan, then add the garlic and cook for 1 to 2 minutes, stirring constantly.

2. Do not allow the garlic to brown. Add the tomatoes and basil leaves and bring to a boil.
3. Reduce the heat and simmer, stirring occasionally, until most of the liquid cooks out.
4. When there is still some liquid left in the pan, carefully puree the sauce using a hand-held blender.
5. Bring it back to a boil, and continue simmering until desired consistency.
6. Let it cool, sieved out the tomatoes (if there is still too much water), then spread on pizza dough.

Pizza Toppings
Pizza 1:
Minced meat and spinach
Pizza 2:
1 can of tuna, 1 small red onion and spinach

Chocolate Vanilla Swirl Cheesecake




This is a very easy recipe, and if you like chocolate cheesecake, I think you will be pleased.

To make this cheese cake, line a 13 x 9 inch baking pain with foil, with the ends of the foil extending over the sides of the pan. This really makes removing the cheesecake from the pan super easy.


Next, mix cookie crumbs and butter. Press firmly onto the bottom of the prepared pan. Bake for ten minutes. I actually forgot to bake it first and just poured the cream cheese mixture right on top, and it still came out good.


Beat cream cheese, sugar, and vanilla in a large bowl with an electric mixer on medium speed until well blended. Add sour cream. Mix well. Add eggs one at a time, beating on low speed after each addition just until well blended. Remove one cup of batter and set aside. Stir melted chocolate into remaining batter in bowl. Pour over crust. Top with spoonfuls of the remaining cup of plain batter.


Cut through batters with a knife several times for a swirled effect.


Bake for 40 minutes or until the center is almost set. Cool. Refrigerate for, at least, four hours or overnight. Use foil handles to lift cheesecake from pan before cutting to serve.


Chocolate Vanilla Swirl Cheesecake Philadelphia cream cheese

20 Oreo cookies, crushed (about 2 cups)
3 Tbsp. butter, melted
4 packages of cream cheese (or neufchatel cheese) (8 oz each), softened
1 cup of sugar
1 tsp. vanilla
1 cup sour cream
4 eggs
6 ounces semi sweet chocolate, melted and cooled

Preheat oven to 325 degrees F. Line a 13 x 9 inch pan with foil, with the ends of the foil extending over the sides of the pan. Mix cookie crumbs and butter; press firmly onto bottom of prepared pan. Bake 10 minutes.

Red, White, and Blue Whoopie pies


2 cups all-purpose flour
2 Tbsp. unsweetened cocoa powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup butter, softened
1 cup packed brown sugar
1 egg
1 tsp. vanilla
1/2 cup buttermilk

Food coloring. If you are making these red and blue, you will split the batter in half and tint half red with about 1/2 of a 1-oz. bottle of red and half blue with 1/2 of a 1-oz. bottle of blue or until the colors are to your liking. If you are making them all red, you will use 1 1-oz. bottle of red.

Parchment paper for lining baking sheets

Traditional Whoopie Pie Filling:

6 Tbsp. of butter, melted
1 cup plus two tablespoons of confectioners sugar
1 cup plus two tablespoons of marshmallow fluff
1 1/1 tsp. of vanilla extract

In a medium bow, mix all ingredients vigorously until well blended.



Cream Cheese Whoopie Pie Filling:

1/4 cup butter, softened
4 ounces of cream cheese, softened
7-ounce jar of marshmallow fluff

In a medium bowl, beat butter and cream cheese. Fold in marshmallow creme.

Directions:

1. Preheat oven to 375 degrees F. Line baking sheets with parchment; set aside. In medium bowl combine flour, cocoa powder, baking soda, and salt; set aside.

2. In large mixing bowl beat butter on medium to high 30 seconds. Beat in brown sugar until light and fluffy. Beat in egg and vanilla. Alternately add flour mixture and buttermilk, beating after each addition just until combined. Stir in food coloring.

3. Spoon batter in 1- or 2-inch diameter rounds, about 1/2-inch high on prepared baking sheets, allowing 1 inch between each round.

4. Bake 7 to 9 minutes for 1-inch cookies or 9 to 11 minutes for 2-inch cookies, or until tops are set. Cool completely on baking sheets on rack. Remove cooled cookies from baking sheets.

5. To fill, dollop Whoopie Pie Filling on flat sides of half the cookies. Top with remaining cookies, flat sides down. Makes 60 one-inch or 42 two-inch cookies.

6. To store: If using cream cheese filling, refrigerate in airtight container up to 4 days. Let stand at room temperature 15 minutes before serving. If using traditional filling, can be stored in an airtight container unrefrigerated.
